Between a 3 month old baby, keeping the house clean, having a little fun time, and trying to get dinner together, life can get a little crazy! Which means I don’t always get to the grocery store, so I end up throwing a lot of different things together that I happen to have.
Tonight was no exception, however it was soo good, I just had to snap some photos and write about it a little! I pulled from my fridge some leftover mashed cauliflower, chicken broth, cream, potatoes, carrots, mushrooms, and of course a little bacon 😉 . I got some rice cooking on the side as well, and my carrots and potatoes chopped up and boiling. First I added the cauliflower to a pot with chicken broth and just a little bit of cream, and than started adding my cooked potatoes and carrots, threw in the rest of my ingredients, and some onion and cheese, and wa-la! Season to taste and enjoy a delicious hearty soup, that will taste great tomorrow for lunch!
